Dinner: Chicken Cordon Bleu Burger

The flavors that make up Chicken Cordon Bleu, besides the chicken of course, is the Swiss cheese, thyme and ham. That is where this recipe for this amazingly delicious chicken burger comes from. Ground chicken that is thigh and drumstick meat only is best for this burger to keep it moist and juicy, but you can use a chicken breast as well. This will help keep the burger leaner if that’s what you want. It would also cut down on calories and fat.

What You Need:

  • 1 lb ground chicken
  • 1/3 cup ham (finely diced)
  • 4 slices Swiss cheese
  • 8 small slices of pumpernickel bread (toasted)

  • 1 tsp Dijon mustard
  • 5 tbsp shallot (finely chopped)

How to Make It:

  • Preheat grill to medium high.
  • Mix mayonnaise, mustard, 1 tbsp shallot, 1 tsp thyme, chicken, ham, salt and pepper in a medium bowl. Combine but do not over-do it. Form 4 patties that are a little less than an inch thick.
  • Oil the rack of the grill. Put the burgers on the grill and cook about 4 to 5 minutes each side.
  • Put cheese on the burger and cook until cheese is melted.
  • Place the burgers on the toasted bread with the mayonnaise and spinach.

Dinner: Lamb Koftas with Spiced Yogurt

What You Need:

The Lamb Koftas:

  • 10 ½ oz lean lamb mince
  • 2/3 cup pine nuts (finely chopped)

  • 2/3 cup wheat germ
  • 1 onion (finely chopped)
  • 2 tbsp parsley (finely chopped)
  • 1 tsp olive oil

The Yogurt Dip:

  • 7 oz Greek yogurt (thick and low-fat)

  • 1 red Thai chili (finely chopped, seeds removed)
  • 1 tbsp parsley (finely chopped)
  • ½ tsp ground cumin

How to Make It:

  • Mix wheat germ in large bowl with cold water and cover. Let stand for 10 minutes then drain and pat dry with a towel.
  • Mix wheat germ, lamb mince, egg, onion, pine nuts and parsley into a large bowl. Take chunks of it and roll them into small balls the size of a golf ball. Place on a baking sheet, cover with plastic wrap and put in the refrigerator for about 30 minutes.
  • Place the chili, mint, parsley, coriander, garlic, cumin and yogurt into a bowl and mix.
  • Heat a tbsp. of oil in a large frying pan on medium heat. Add the kofta balls and fry. Turn often until it is browned all over.

Dinner: Chicken with Creamy Braised Leeks

The thick and creamy sauce of this dish is excellent when poured over egg noodles or mashed potatoes. Leeks come in different sizes depending on whether you buy them in the store or you grow them yourself. The ones you grow yourself tend to be smaller so keep that in mind and adjust the amount of leeks accordingly.

What You Need:

    • 4 boneless, skinless chicken breasts (trimmed with tenders removed)
    • 4 large leeks
    • 6 cloves garlic halved

  • ½ cup heavy cream
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp ground pepper

How to Make It:

  • Preheat oven 425 degrees.
  • Trim the roots and tops off the leeks and leave 5 to 6 inches of white and light green parts. Cut them into quarters and rinse well. Place them in a single layer in a large baking dish lying on their sides.
  • Pour in the broth and place garlic and thyme in the broth between the leeks.
  • Bake leeks for 40 minutes.
  • After 30 minutes; put salt and pepper on chicken.
  • Heat oil in large skillet on medium heat. Add chicken and cook about 3 to 5 minutes each side until brown and remove from heat.
  • When the leeks are done; remove them from the oven and place the chicken among the leeks. Add cream and ¼ tsp salt to the skillet while it is still hot. Stir it a bit and let the heat from the pan warm the cream. Pour the cream over leeks and chicken.
  • Put baking dish back in the oven and bake about another 10 to 15 minutes. Serve the chicken with the leeks and spoon more sauce over both of them.

Dinner: Creamy Garlic Pasta with Shrimp and Vegetables

This dish tastes excellent when served with cucumber and tomato tossed with lemon juice and olive oil. This makes a great meal on a hot day.

  • 12 oz raw shrimp cut in 1 inch pieces (peeled and deveined)

  • Bring large pot of water to a boil. Ad spaghetti and cook 2 minutes less than the directions say on the package. Add shrimp, asparagus, bell pepper and peas. Cook about 2 to 4 minutes longer until the pasta is tender and the shrimp is cooked.
  • Mash garlic and salt in a large bowl until it’s a paste. Whisk in yogurt, parsley, lemon juice, oil and pepper. Add pasta mixture and toss. Serve and sprinkle with pine nuts.
